Soft Chocolate Chip Cookies

Since we get back from DoubleTree, Adam always asked for soft cookies.. so I search for the best recipe to try and was attracted to this particular recipe.. But I did a no-nut cookies since Adam hate nuts..
 
I prepared the mix one day earlier and chill the mixture.. then the next morning I bake them with the help of my junior chef.. the mixture was so tasty that Adam can't help himself eating the raw mix..
 
After baking, the cookies turn out just the way he like it.. I made the cookies super giant size that he love so much.. now he must have a cookie a day..
 
 
INGREDIENTS
43 grams rolled oats
288 grams all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon cinnamon
226 grams (2 sticks) butter, softened
165 grams brown sugar, packed
150 grams granulated sugar
1 1/2 teaspoons vanilla
1/2 teaspoon lemon juice
2 eggs
3 cups semisweet chocolate chips
1 1/2 cups chopped walnuts
 
 
PREPARATION
1.   preheat oven to 350 degF.
2.   grind oats in a food processor or blender until fine.
3.   combine the ground oats with the flour, baking soda, salt and cinnamon in a medium bowl.
4.   cream together the butter, sugar, vanilla and lemon juice in another medium bowl with an electric mixer.
5.   add the eggs and mix until smooth.
6.   stir the dry mixture into the wet mixture and blend well.
7.   add the chocolate chips and nuts to the dough and mix by hand until ingredients are well incorporated.
8.   spoon rounded 1/4 cup portions onto ungreased cookie sheet. place the scoops about 2 inches apart. you don't need to press the dough flat.
9.   bake for 16 to 18 minutes or until cookies are light brown and soft in the middle.
10. store in a sealed container when cool to keep soft.
11. for the best results, chill the dough overnight in the refrigerator before baking the cookies.

Little Adam & Tennis

this is the extra racket for little Adam.. excuse the string terputus..

Mr. AZ missed playing tennis..
(eventhough he played tennis once a week!!)
he's been giving hints on this..
So last nite he asked me to get ready..
me & little Adam..
to follow him..
i ask him..
"where to?"
he said..
"special place"
I guess I was too excited to even care where..
I put on my simplest where..
The difficult part was to change little Adam..
he refused to change..
Mr. AZ said
just let him be with his #8 Harimau Malaya jersey..
then off we go..
He drove us to an indoor tennis court..
so he tricked me into thinking we were going to a special place..
instead he brought us to watch him play??!!
great plan..
then we were joint by my nephew..
and later they start playing..
with another 2 player..
it seems like forever for me..
with little adam being as restless as he is..
it was raining heavily outside..
and all i can hear was little adam mumbling
and people scream/ shout while serving..
when Mr. AZ finished..
he was join by little Adam on the court..
9 p.m session was the last session of the day..
before the court closes..
so we had sometimes for ourselves before everybody finished their game..

At first, I have to accompany him..
quite a shy character little Adam have..
ikut sape??!!
After a little warm up..
he was confident..
he starts shouting just like he was playing tennis..

of little Adam playing tennis..

 
 

It was a great experience..
and good exercise..
but a little tired..
luckily today is Saturday..

Very Strawberry Pavlova

I was craving for pavlova the other day.. and i remembered reading an entry by this lady : LadyVerde on making a pavlova.. as i go through the ingredients..i'm very sure that I can make it myself.. so this is my journey on making pavlova for the first time..but one thing for sure..you really have to have tonnes of patience as baking the meringue takes a long time.. and you guys can add more fruits for your toppings..

Here's the recipe that i got from her blog..for me the recipe is on the sweeter side..maybe i'll put less sugar next time..

INGREDIENTS
-- Meringue
4 large (120 grams) egg whites
1 cup (200 grams) superfine sugar - castor sugar
1/2 teaspoon pure vanilla extract
1 teaspoon white vinegar
1/2 tablespoon cornstarch - cornflour
tracing/ baking paper

-- Topping
1 cup (240 ml) heavy whipping cream
1 1/2 tablespoons (20 grams) granulated white sugar - or to taste
1/2 teaspoon pure vanilla extract
fresh fruits

PREPARATION
1.   preheat oven to 130 degC.
2.   beat the egg whites until fluffy.
3.   add castor sugar a tablespoon at a time while continue beating it in medium speed until mixture forms stiff & shiny peaks.
4.   add in vanilla mixture & mix.
5.   take out the mix & sprinkle vinegar and cornflour. mix well.
6.   line the tracing paper on the baking sheet & spread the meringue mix. make an indentation in the middle of the circle.
7.   bake in the oven under 130 degC for 75 minutes.
8.   its done when it turns into very pale pink colour and crispy outside, marshmallowy inside. let it cool.
9.   whip the cream until fluffy, add in vanilla extract & sugar.
10. spread the cream on top of the meringue & decorate with the fresh fruits.
11. wallah! you're done!

Spicy Aglio Olio

Feeling hungry during one of the late nite up.. went down to the kitchen and search for food.. unfortunately our sausages (my quick fix when i feel hungry late at nite) supply finished.. as i was searching for food in the fridge.. i saw fresh button mushroom.. extra's from little Adam's mushroom soup.. and though of eating sauteed mushroom.. maybe with bread or something.. then i remember we have spaghetti.. and prawn are always available in the freezer.. so there i was in the kitchen alone at nite and fix myself an experimented spicy aglio olio.. thanx to Shilashower for her entry on spicy prawn olio that inspired me that nite.. it sure was easy peasy.. 

INGREDIENTS
spaghetti
fresh button mushroom
prawn - peeled and cleaned
butter
dry chili flakes - thanks to domino's
garlic
black pepper - crushed
dry herbs - basil & rosemary
salt

PREPARATION
1. cook spaghetti until soft in salted water and a little bit of oil. drain and run through with cold water. set aside.
2. saute button mushroom with butter until caramelized. set aside.
3. heat butter and fry crushed garlic until fragrant.
4. add in the sauteed button mushroom and prawn.
5. add in the spaghetti and mix.
6. season with crushed pepper, salt and herbs
7. wallah! you're done!





p/s: even Mr. AZ was impressed with my late nite cooking that day.. heeee..
